A 5-gallon carboy of freshly racked hops mead. The vintage is unusually clear for a honey wine at this stage of production. The color is a rich amber. The completely dry wine has a flavor that is a complex blend of sweet honey, bitter hops and a secret spice mixture in the original ferment. At least half of this exceptional mead will be processed into sparkling wine (Methode Champenoise) while the rest will be bottled as a still wine for ageing. All Rights Reserved © 2013 padre art
